Meet Chef Jeff Braun, Director of Culinary at Hard Rock Cincinnati

Jeff Braun was born and raised as an Ohioan from Cleveland. He began working special events in Food & Beverage at the age of 11 for his mother who worked for Executive Caterers.  Braun continued working in the industry non-stop holding positions from bus boy to bartender & dishwasher to kitchen manager. After that, he went to The Pennsylvania Institute of Culinary Arts in Pittsburgh and worked at the city’s beloved Le Mont Restaurant. 

While working for The Four Seasons Hotels in Chicago & Washington D.C., he achieved his first sous chef promotion. This is where he learned to provide luxury service and perfected his culinary technique at the only 5 Star Restaurant inside the only 5 Diamond hotel in Chicago at the time. Later on, he moved to work at The Mirage Hotel & Casino in Las Vegas where he took on the roll as Assistant Executive Chef and was promoted to the property Executive Chef that was instrumental in the redesign and re-opening of 16 outlets with 600 employees and $110 million food revenues.

Braun became a Cincinnatian in March of 2020 where he started working for Hard Rock International as the properties Director of Culinary. He began transforming the face of the casino food program to what it is now. At Hard Rock our culinary team’s goal is to provide the highest quality ingredients and prepare all items from scratch. When this is not possible, we are proud to have developed partnerships with renowned Cincinnati partners such as Tuba Baking, Babushka Pierogies and Sixteen Brick’s Bakery, to name a few.

I’m often asked what’s my specialty or favorite dish to cook which gets a response that is, maybe, unexpected. I explain that my love and passion is for food, all food. I am proud that I have studied and practiced understanding the origins, culture, history and proper technique to bring food to those I serve. I love to travel and have been to 37 countries where my goal is to immerse myself in their culture, learn and try the cuisines of the world.
